Black Bean Chilli and Sesame Slaw Sliders are our go-to Friday night “burger night” dinner.
That said, my son and Husband are looking forward to making a plant-based Impossible Burger when they are released in Australia. They still crave a “meaty” burger on occasion.
I would previously cook store-bought veggie burgers for us, (which can be a bit on the dry side) maybe with a hashbrown in there and smother them in cheese with a slice of tomato and a bit of lettuce. Frankly, they weren’t very tasty or healthy.
But since going plant-based, we have been eating much more varied, unprocessed food.
A Bit of Food Preparation makes Friday Nights Easy!
I make big batches of the Black Bean Chilli and keep it in the freezer to serve in this slider, over a bowl of brown rice, in tacos, enchiladas or as part of a poke bowl.
Winter brings gorgeous purple cabbages. I keep a container of shredded cabbage in the fridge, it is so handy to make a quick salad or toss into a weekday stirfry.
So come Friday night, these sliders come together surprisingly quickly because so much can be prepared in advance.
These Black Bean Chilli and Sesame Slaw Sliders not only taste incredible, but they are also an easy meal to prepare if you have friends coming over for a casual dinner.
Black Bean Chilli
I make big batches of this Black Bean Chilli, it freezes very well.
You will need
- 1 Tablespoon of Olive oil
- 1 Red onion, finely diced
- 1/2 head of garlic cloves minced
- 600g cooked black beans (I used two cans of black beans, drained and rinsed.)
- 1 400g tin of crushed tomatoes
- 1 teaspoon of cacao powder
- 1/2 teaspoon each of chilli powder, smoked paprika, turmeric and cumin
- 1 tablespoon of Scrap Vegetable Stock Paste
- A big bunch of fresh coriander, stems and roots finely chopped, leaves roughly chopped
Brown your garlic, onion and coriander stems in the olive oil in a deep saucepan. When browned, mix in the spices and stock paste and stir to incorporate.
Add the crushed tomatoes and stir well. Add the black beans, stir through the sauce and allow to simmer for 10 minutes.
Turn off the chilli and stir through the coriander leaves. Set aside until ready to serve.
You will need
- 1/4 purple cabbage, finely shredded
- 1/2 telegraph cucumber, seeded and sliced thinly
- 3 spring onions, sliced finely
- 2 teaspoons sesame oil
- Juice of 1 small lime
Combine all ingredients into a large bowl and toss. Set aside until ready to serve.
Black Bean Chilli and Sesame Slaw Sliders
You will need
- 4 large rolls (I love turkish bread rolls!)
- Black Bean Chilli
- Sesame Slaw
- 2 fresh avocados
- Fresh Coriander, Green Chilli and Lime Sauce
Slice your roll and spread half an avocado on one side.
Spread the over side with Fresh Coriander, Green Chilli and Lime Sauce
Add a generous serving of Black Bean Chilli to your roll and top with the Sesame Slaw.
Slice your slider in half and try to eat it without getting it all down your shirtfront! It’s a challenge. Trust me. These Black Bean Chilli and Sesame Slaw Sliders are best eaten in the company of great friends!
Makes 4 large sliders, 8 medium-small sliders.
I love these sliders. They are a big hearty meal and too delicious! These sliders are also great served with a side of sweet potato oven fries.
If you are avoiding bread, this slider can be composed in half a roasted sweet potato or in white corn tortillas and it is so good!
